Once a PC is in someone else's hands, it's theirs. If they mess it up, that's their fault. Your job is making sure it is in good shape when it is handed over to them, and telling them to keep it that way. I guess for the school environment you will also have proxy severs with filtering restricting students and staff slightly differently and that will be the same with whatever AV or OS you use.
I did wonder if you should have a separate network for the Admin as opposed to teaching staff and student interactions. Years ago, we had to upgrade the computing at the school I worked at. Took the opportunity to install Linux OS on some of the old PCs and laptops being junked to give us more rooms with computing.
They worked really well and they were very fast and secure. Students just got on and used them with no problem. May be something you could consider.
